Processed cheese is cheaper and melts well.

In a large pot, combine 1 kilo of beef with 3 liters of water, 3 guajillo chiles, 2 ancho chiles, 1 clove of garlic, 1/4 onion, bay leaves, allspice, cumin, and coarse salt.

Bring the mixture to a boil and then simmer until the meat is tender.

Once cooked, shred the beef and reserve some of the broth for later use.

To make quesabirrias, heat tortillas and fill them with shredded beef, asadero cheese, and a bit of the reserved broth before folding and toasting them.
