Put the plantains in a pot to boil until soft, about 15 minutes.

Add sugar and cinnamon to the mashed plantains and mix well.
Grease hands with vegetable oil to prevent sticking.
Form small balls of the plantain mixture and flatten them into discs.
Fill each disc with a spoonful of the mixture and fold over to seal.
Heat vegetable oil in a skillet and fry the empanadas until golden brown.
Remove from oil and coat with sugar before serving.
