Remove the intact bit from the avocado and cut it open.
Scoop out the avocado flesh with a spoon.
Use 4 ripe avocados for the guacamole.
Add juice of half a lemon, salt, pepper, and about 1 teaspoon of cayenne pepper to the avocado.
Remove seeds from red chilies and add them to the guacamole, mashing to desired chunkiness.
Taste the guacamole to adjust salt, pepper, and acidity.
Chop garlic, red onion, and cilantro, then mix them into the guacamole.
Chop tomatoes, removing excess juices, and add to the guacamole.
Heat a skillet and add a little olive oil.
Add chopped garlic and half a red onion to the skillet, sauté for 2-3 minutes.
Add ground beef to the skillet and sauté for about 5 minutes until browned.
In a separate pot, make a roux with 3 tablespoons of butter and 3 tablespoons of flour, mixing together.
Add 1 cup of milk to the roux, adjusting for desired thickness.
Add grated cheddar cheese to the sauce and mix until melted and smooth.
On a baking sheet, layer doritos, ground beef, chopped tomatoes, jalapeños, and cheese sauce.
Add more layers of doritos, ground beef, tomatoes, jalapeños, and cheese on top.
Cook the layered nachos on indirect heat for about 10 minutes until everything is melted.
