- 7Carefully place the coated fish in the hot oil and fry for 4-5 minutes on each side until golden brown.
- 8Remove the fish from the skillet and drain on paper towels to absorb excess oil.
- 9Prepare a simple slaw by mixing shredded cabbage, diced tomato, onion, and cilantro in a bowl.
- 10Serve the fried mojarra with lime wedges, avocado slices, and the slaw on the side.

Instructions
- 1In a skillet, toast the dried guajillo and ancho chiles over medium heat for about 2-3 minutes until fragrant. Remove from heat and let cool.
- 2Once cooled, blend the toasted chiles with 1 cup of beef broth until smooth. Set aside.
- 3In the crock pot, add the chopped onion, minced garlic, and the remaining beef broth.
- 4Place the beef chuck roast in the crock pot and pour the blended chile mixture over it.
- 5Add cumin, oregano, cinnamon, black pepper, salt, bay leaves, and apple cider vinegar to the crock pot. Stir to combine.
- 6Cover and cook on low for 8-10 hours or on high for 4-5 hours until the meat is tender and easily shredded.
- 7Once cooked, remove the beef from the crock pot and shred it with two forks.
- 8Return the shredded beef to the pot and stir to combine with the broth.
