  • 1 tsp oregano
  • 1/2 tsp cinnamon
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 2 bay leaves
  • 1 tbsp apple cider vinegar
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)
  • Corn tortillas (for serving)

Instructions

  1. 1In a skillet, toast the dried guajillo and ancho chiles over medium heat for about 2-3 minutes until fragrant. Remove from heat and let cool.
  2. 2Once cooled, blend the toasted chiles with 1 cup of beef broth until smooth. Set aside.
  3. 3In the crock pot, add the chopped onion, minced garlic, and the remaining beef broth.
  4. 4Place the beef chuck roast in the crock pot and pour the blended chile mixture over it.
