Cuban roast pork, known as 'Lechón Asado', is a traditional dish often served during celebrations and family gatherings in Cuba.

Ingredients

  • 4 lbs pork shoulder
  • 1/2 cup olive oil
  • 1/2 cup fresh orange juice
  • 1/4 cup fresh lime juice
  • 1 head garlic, peeled
  • 1 tbsp ground cumin
  • 1 tbsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. 1Preheat your oven to 300°F (150°C).
  2. 2In a blender, combine the olive oil, orange juice, lime juice, garlic, cumin, oregano, salt, black pepper, and red pepper flakes. Blend until smooth to create the mojo marinade.
  3. 3Place the pork shoulder in a large dish and pour the mojo marinade over it, ensuring the pork is well coated. Cover and marinate in the refrigerator for at least 4 hours, preferably overnight.
  4. 4Remove the pork from the refrigerator and let it sit at room temperature for about 30 minutes before cooking.
  5. 5Place the marinated pork in a roasting pan and cover it with aluminum foil.
  6. 6Roast in the preheated oven for about 4 hours, or until the pork is tender and easily pulls apart with a fork.
  7. 7Remove the foil during the last 30 minutes of cooking to allow the pork to brown.
  8. 8Once cooked, remove the pork from the oven and let it rest for 15-20 minutes before slicing.
  9. 9Serve the sliced pork with the remaining mojo sauce drizzled on top and garnish with fresh cilantro.
