Eggplant Toast

3 Japanese eggplant
1 large Italian eggplant
½ teaspoon chili flakes
½ teaspoon fennel
½ teaspoon cumin
½ teaspoon caraway seeds
1 tablespoon extra virgin olive oil
squeeze of lemon juice
a pinch of kosher salt

micro greens (garnish)

Toast the seeds and chili flakes in a hot skillet until they begin to smoke. Transfer to a spice mill and grind.

Preheat barbecue to 500°F. Grill eggplant until soft and tender. Transfer eggplant to a bowl, cover and let stand for 15 minutes.

Carefully peel the flesh of the eggplant away from the skin transferring it into a small bowl. Add the oil, lemon juice, ground spices and a pinch of salt and mash everything together using a fork.

Spread onto your favourite toasted bread and garnish with a sprinkle of micro greens.
