Drain one 6 ounce can of black pitted olives (equals 1 cup) into a sieve and shake off any excess liquid, add the black olives to a large bowl, drizzle in 1 tablespoon of extra virgin olive oil, 1 clove of minced garlic and 1/2 teaspoon of dried oregano, mix well, then transfer to a serving bowl and add to a cutting board or large platter.

Derind one 7 ounce block of Manchego cheese and cut into thin slices, decorate the slices of cheese on the board, drain a can of green pitted olives and shake off any excess liquid, grab one tin of Spanish anchovies, roll each anchovy over one green olive and pierce with a toothpick to secure, add them to a serving dish and onto the platter.

Grab 3 slices of smoked salmon and add about 1 ounce of soft goat cheese to each slice, then roll the salmon around the goat cheese and cut into 1/2-inch thick pieces, pierce with a toothpick to secure it all together, transfer to a serving dish and onto the platter.

Add some seedless green grapes to the platter, 1 cup of fried Marcona almonds, some whole wheat crackers and garnish the board with fresh parsley, enjoy!
