Sweet Red Pepper and White Bean Dip

1 8-12 ounce jar Fire Roasted Red Peppers, drained
1 cup canned White Beans, rinsed
3 cloves Garlic, peeled and trimmed
2 ounce Sherry Vinegar
1 Tablespoon Dijon Mustard
4 ounce Olive Oil
To taste Salt and Pepper
Cut Veggies for dipping (carrots, celery, bell pepper, broccoli, cauliflower)

In a blender or food processor, combine the cooked white beans, roasted red bell pepper, tahini, lemon juice, minced garlic, ground cumin, salt, and black pepper.

Blend until smooth, scraping down the sides as needed.

With the blender running, slowly drizzle in the olive oil until fully incorporated and creamy.

Taste and adjust seasoning if necessary, adding more salt or lemon juice to your preference.

Transfer the dip to a serving bowl and garnish with chopped parsley.
