MINI PIZZAS, MUFFIN TIN RECIPE, | Richard in the kitchen

Pre-heat oven to 425.

Warm the tortillas in the microwave for about 5-10 seconds.

Using a glass or cookie cutter, cut out 3 1/4 inch rounds from the tortillas.

Lightly spray the muffin tin with non-stick spray.

Add the cut out tortilla rounds to each muffin tin cup, forming along the bottom and sides.

Brush on the pizza sauce, add a pinch of garlic salt, mozzarella, parmesan and top with mini pepperonis.

Bake in the oven for 12 minutes.

Garnish with red pepper flakes and chives and serve.
