Peel and cut one whole pineapple into smaller pieces.

In a pot, add pineapple, 1 and 1/4 cups sugar, and 1/3 cup water. Cook for 10 minutes until soft.

Smash the pineapple slightly, leaving some chunks.

In a stand mixer, add 1 stick of butter flavored shortening, 2 sticks of unsalted butter, 5 tablespoons of baking powder, and 1 teaspoon of salt. Mix at medium speed for 5 minutes.

Add 6 cups of masa to the mixer.

Add the cooked pineapple and 1 cup of sugar, mixing on low speed.

Slowly add 1 cup of warm pineapple juice and 3 cups of warm water while mixing.

Optionally, add a couple of drops of food coloring and increase the speed to medium, mixing for another 5 minutes.

Test the masa; if it floats, it's ready. If not, add more water and mix again.

Soak corn husks overnight for easier folding.

Add water to the pot just below the steamer, layer with husks, and add tamales standing up.

Cover with another layer of husks and a wet rag, then cook on medium heat for 50 minutes to an hour.
