Place 2 kilograms of flank steak in a bowl for marinating.
In a blender, combine 1 whole onion, 1 jalapeno, 1 bulb of garlic, a fork full of chipotle peppers in adobo sauce, and 1 bunch of cilantro.
Add 1 tablespoon of ground cumin, 1 tablespoon of paprika, and 0.5 tablespoon of dry oregano to the blender.
Include 0.5 of a red pepper, 0.5 of an orange pepper, and 0.5 of a yellow pepper in the blender.
Blend the mixture until smooth.
Pour in 1 cup of olive oil and blend again.
Add 2 tablespoons of salt and 1 tablespoon of black pepper to the marinade and blend once more.
Squeeze in the juice of 4 small oranges (or 2 large ones) and 2 limes into the marinade and mix well.
Rub the marinade thoroughly into the flank steak, ensuring it's well coated.
Let the steak marinate overnight or for a minimum of 24 hours.
Remove the steak from the marinade and let it sit for about 10 minutes on each side before grilling.
Prepare the salsa by combining 2 cups of chopped roma tomatoes, 0.5 cup of chopped onions, 1 tablespoon of garlic, 0.5 cup of cilantro, the juice of 1 lime, 1 tablespoon of salt, and 1 tablespoon of black pepper in a bowl. Mix well and adjust seasoning to taste.
For the avocado salsa, mash 2 small avocados and mix in about 0.5 cup of the prepared salsa.
Grill the marinated flank steak for about 10 minutes on each side until cooked to desired doneness.
Let the steak rest for about 20 minutes before cutting.
Cut the steak into cubes, first cutting with the grain and then against the grain for tenderness.
Warm corn tortillas in a skillet with a little oil on both sides until pliable.
Assemble the tacos by placing the cubed steak on each tortilla, adding a scoop of avocado salsa, a bit of salsa, and a sprinkle of Mexican cheese and cilantro.
