Introduce the dish and ingredients: herring, yogurt, mayonnaise, onion, apple, pickles, sweetener, and pepper.
Use herring that is not packed in oil, preferably with a smoky flavor.
If using oil-packed herring, soak it in milk for one hour to reduce saltiness.
Add a good tablespoon of yogurt to a bowl.
Add two tablespoons of mayonnaise to the yogurt.
Add a splash of sweetener to the mixture.
Do not add salt as the herring is already salty.
Add a tablespoon of cucumber brine to the mixture.
Stir the dressing ingredients together until well combined.
Peel and dice the apple into small cubes and add it to the bowl.
Dice two to three pickles and add them to the bowl.
Dice the onion and add it to the bowl as well.
Cut the herring into bite-sized pieces and add it to the bowl.
Stir everything together until well combined.
Chill in the refrigerator before serving.
