Roasted Tomato Quinoa Soup

¼ cup uncooked quinoa
½ cup water
8-9 medium-sized tomatoes, around 850 grams
1 medium-sized onion
3-4 garlic cloves
a handful of fresh cilantro leaves
½ tablespoon dried basil leaves
¼ teaspoon ground black pepper
salt to taste
1 tablespoon olive oil
3 cups vegetable stock

Cook the quinoa by combining ¼ cup uncooked quinoa and ½ cup water in a pot, bring to a boil, then reduce heat and simmer until water is absorbed.

Preheat the oven and roast the halved tomatoes until soft.

In a pot, heat 1 tablespoon of olive oil and sauté the sliced onion and garlic until fragrant.

Add the roasted tomatoes, vegetable stock, dried basil, ground black pepper, and salt to the pot.

Bring the soup to a boil, then reduce heat and simmer for a while.
