Asian Slaw

2 tbsp lemon juice
2 tbsp vinegar
2 tbsp honey
1 tsp grated ginger
1 tsp garlic finely chopped
salt to taste
1/2 tsp black pepper powder
1/4 cup olive oil
1 tbsp soy sauce
1 tsp sriracha or use red pepper flakes (optional)
1 cup purple cabbage
1 cup green cabbage
1/2 yellow bell pepper, sliced
1/2 red bell pepper, sliced
1/2 green bell pepper, sliced
1 carrot
2 spring onion whites
3 tbsp chopped cilantro (coriander leaves)
spring onion greens
1/4 cup roasted & crushed peanuts
2 tsp roasted sesame seeds

To make Asian slaw dressing, whisk together lemon juice, vinegar, honey, grated ginger, finely chopped garlic, salt, black pepper, olive oil, soy sauce, and sriracha until well combined.

In a large bowl, combine purple cabbage, green cabbage, yellow bell pepper, red bell pepper, green bell pepper, carrot, spring onion whites, and chopped cilantro.

Pour the dressing over the slaw and toss gently to coat all the vegetables evenly.

Sprinkle roasted & crushed peanuts and roasted sesame seeds on top for garnish.

Serve immediately or chill before serving.
