4 cups Chinese Cabbage (Napa)
2 cups Purple Cabbage
1 cup Carrot
2 scallions (spring onions)
1/2 cup finely chopped cilantro (Coriander leaves)
1 red bell pepper, thinly sliced
1/2 cup roasted peanuts
2 tbsp roasted sesame seeds
1/4 cup white vinegar
1/4 cup olive oil
1/2 tsp ground pepper
1/2 tsp salt
2 tbsp Light Soy Sauce
1 tsp grated or finely chopped Ginger
1 tsp minced or finely chopped Garlic
1/2 tsp red pepper flakes
2 tbsp honey

In a large bowl, combine the shredded cabbage, carrots, cilantro, and green onions. Toss to mix.

In a separate bowl, whisk together the Asian slaw dressing ingredients.

Pour the dressing over the slaw and toss to coat evenly. Taste a bite of the slaw and adjust the seasonings until the flavors are balanced to your preference.
