Lentil Walnut Tacos

Food for Life Sprouted Corn Tortilla
1 cup cooked lentils
1 cup toasted walnuts
1 tbs olive oil
1/2 onion
1 1/2 tsp smoked paprika
1 tsp cumin
1 tbs tomato paste
1 large avocado
1/4 cup cilantro
2 cloves garlic
1/3 cup vegan sour cream
1 tsp lime juice
1 tsp olive oil
Lettuce
Tomato
Avocado
Chopped onions
Cilantro (for garnish)

Add cooked lentils and toasted walnuts into food processor and pulse until mixture resembles ground beef.

Add olive oil to skillet and place onions in skillet to sauté.

Season onions with smoked paprika, cumin, and tomato paste.

Add lentil/walnut mixture to skillet and stir with spatula until all ingredients are well-incorporated.

Cook for two minutes.

Put all of the avocado cilantro cream ingredients in the food processor and combine until smooth.

Assemble tacos with the taco meat and avocado cilantro cream, and add desired toppings.
