Slice onions thinly and keep a larger quantity as they reduce while cooking.
Melt butter in a white pan.
Add sliced onions and brown sugar; gently toss them together.
Cover with a lid and cook on low flame until onions are soft and golden brown.
When onions are glossy, soft, and sweet, they are caramelized and ready.
In a large bowl, crack eggs and add cream, shredded cheese, thyme, black pepper, and salt; whisk until smooth and creamy.
For the crust, add flour, butter, and salt to a mixer bowl.
Turn on the mixer and let it come together; add water gradually to form a soft dough.
For a lighter crust, you can add a bit of baking powder.
Take the dough out, knead it by hand a little, then roll it out.
Cut the dough into a circular shape and press it into a tart mold, using fingers to gently press it down so it sticks.
Trim excess dough from the edges and bake in the oven for 15 minutes.
Once the crust cools slightly, pour the egg and cheese filling into it.
Sprinkle a little thyme on top and pop the tart back in the oven for 20 more minutes.
After baking, remove the tart from the mold, spoon caramelized onions on top, and finally garnish with some cream cheese and thyme.
