Add 2 ounces of machaca and sauté until toasty, about a couple of minutes.

Add 2 cloves of minced garlic, diced jalapeño (half for less spice), and scallions; sauté for several minutes until softened.

Add diced tomatoes (with most seeds removed) and sauté until combined.

Pour in 1/2 cup of water and simmer to rehydrate the beef, keeping it uncovered.

Once the beef is rehydrated but still has texture, add 4 beaten large eggs to the skillet.

Cook the eggs until desired doneness.
