Quarter the red potatoes and cook them until hot.
Cut the cooked potatoes into smaller pieces.
Heat a little pan and add about a tablespoon of canola oil.
Saute about three quarters of a cup of red onions until soft but not brown.
Add a tablespoon of flour, a tablespoon of sugar, half a teaspoon of salt, and half a teaspoon of celery seeds to the onions and stir.
Pour in three quarters of a cup of water, a quarter cup of apple cider vinegar, and two teaspoons of Dijon mustard into the pan and stir to combine.
Add a couple turns of cracked black pepper to the dressing.
Pour the hot dressing over the potatoes and fold gently.
Garnish with parsley before serving.
