Cut 1 pound of top round beef into two-inch cubes.
Place the beef into the slow cooker.
Add 1 chopped yellow onion to the slow cooker.
Pour in 1 cup low-sodium beef broth.
Add 1/2 cup cider vinegar to the mixture.
Add 1 package of baby carrots to the slow cooker.
Chop and add 1 celery stalk.
Add 1 teaspoon of minced garlic from the jar or 1 clove if minced fresh.
Peel and cut 2 small red potatoes into one-inch cubes and add to the slow cooker.
Stir the ingredients in the slow cooker to combine.
Cover the slow cooker and set it to low for 8 to 10 hours or high for 3 to 4 hours.
In a bowl, mix 1 tablespoon brown sugar, 1 teaspoon ground ginger, 1/2 teaspoon nutmeg, and 1 tablespoon whole wheat flour to create a spice mix.
After 8 to 10 hours of cooking, stir in the spice mix into the slow cooker.
Cover the slow cooker again and cook on high for an additional 30 minutes.
