Roasted Veggie Glow Bowls

2 cups mixed vegetables (bell peppers, zucchini, carrots)
1 cup cooked quinoa
1/2 cup chickpeas, drained and rinsed
2 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
1/2 tsp salt
1/4 tsp black pepper
1 avocado, sliced
1/4 cup tahini
2 tbsp lemon juice
1/4 cup fresh parsley, chopped

Preheat the oven to 425°F (220°C).

In a large bowl, combine the mixed vegetables with olive oil, garlic powder, paprika, salt, and black pepper. Toss until evenly coated.

Spread the seasoned vegetables on a baking sheet in a single layer.

Roast the vegetables in the preheated oven for 20-25 minutes, or until tender and slightly caramelized, stirring halfway through.

While the vegetables are roasting, prepare the quinoa according to package instructions if not already cooked.

In a serving bowl, layer the cooked quinoa as the base.

Once the vegetables are done, add them on top of the quinoa.
