Cut the large eggplant into slices about 1 centimeter thick.

Scoop out the flesh from each slice of eggplant.

You can use the eggplant flesh in the filling or cook it separately in aluminum foil to make eggplant caviar.

Finely chop half a carrot and add it to the mixture.

Chop some green onion and add it to the mixture as well.

Add about 2 tablespoons of oil to the mixture.

Season with salt, pepper, and spices: add 1 teaspoon of cumin, 1 teaspoon of garlic powder, 1 teaspoon of five spice, and 1 teaspoon of ginger.

Mix everything well and if it seems too dry, you can add another egg or a bit more oil.

If the mixture is too thick, you can add more oil as needed.
