Add 2 teaspoons of canola oil to a medium pan on high heat.

Add beef stew meat and cook until completely browned and all moisture has evaporated.

Add onions and cook for about 1 minute.

Add garlic and cook for another minute.

Add the red chili and pour beef broth into the container to get all of the red chili out.

Stir to combine and bring to a boil.

Once boiling, add 3/4 teaspoon of Mexican oregano.

Cook the chili on low for about 1 hour and 15 minutes, tilting the lid to let some steam escape.

After 1 hour and 15 minutes, add potatoes and cook for another 15 to 20 minutes until potatoes soften.

Serve the red chili colorado.
