Peel and boil potatoes until tender, about 20 minutes.
Drain potatoes and let cool slightly before mashing.
Mix flour, eggs, and salt into the mashed potatoes until a dough forms.
Form the dough into small balls, about the size of a golf ball.
Prepare a pot of salted water and bring it to a boil.
Drop the dumplings into the boiling water and cook until they float, about 5-7 minutes.
Remove dumplings with a slotted spoon and drain.
In a skillet, melt butter and sauté chopped onions until golden, about 3-4 minutes.
Add diced bacon to the skillet and cook until crispy, about 5 minutes.
Toss the dumplings in the skillet with the onion and bacon mixture.
Sprinkle with chopped parsley before serving.
