Heat a large fry pan over medium heat and add 2 tbsp of extra virgin olive oil.
Finely chop 1 small onion and roughly chop 8 cloves of garlic.
Add the chopped onion and garlic to the hot fry pan and sauté for 3-4 minutes until the onion is translucent and the garlic is fragrant.
Add 1 tbsp of all-purpose flour to the pan and mix for 1-2 minutes to cook off the raw flavor of the flour.
Stir in 1 tsp of sweet smoked Spanish paprika and 1 tsp of dried oregano, mixing until well combined.
Pour in 3/4 cup of lowfat milk and 3/4 cup of vegetable broth, mixing continuously for 4-5 minutes until a slightly creamy sauce forms.
Drain 2 cans of butter beans, rinse under water, and add them to the pan.
Squeeze in 2 tsp of fresh lemon juice and season with sea salt and freshly cracked black pepper, mixing gently.
Lower the heat to low medium and simmer for about 5 minutes to allow the flavors to develop.
Remove the pan from heat and transfer the beans to a serving dish.
Top with grated cheese (Spanish manchego) and freshly chopped parsley before serving.
