Greek yogurt reduces calories while maintaining creaminess

Heat 1 Tbsp olive oil in a pan over medium heat.

Chop 1 onion and add it to the pan, sautéing until translucent.

Mince 4 garlic cloves and add them to the pan, cooking for another minute.

Stir in 1 Tbsp harissa (or tomato) paste and 2 tsp Italian seasoning, mixing well.

Season with salt and black pepper to taste, and add 1 tsp ground cumin and red pepper flakes to the mixture.

Pour in 1/2 cup coconut milk and 1/2 cup vegetable broth, stirring to combine.

Add 100 g sun-dried tomatoes and 1 (15oz) can of butter beans, mixing everything together.

Simmer for a few minutes until heated through and creamy.
