Boil water in a pan and add 2 cups of dried peruano beans and 1 tablespoon of salt.
Cook the beans on low heat for about 45 minutes until tender.
Prepare the masa dough by adding water gradually until a ball forms that doesn't stick to fingers.
Let the masa dough rest covered with plastic wrap.
Dice 1/2 onion and 2 garlic cloves finely.
In a pan, heat oil and sauté the onion and garlic until golden brown (about 5 minutes).
Add the cooked beans to the pan with the onion and garlic, incorporating well.
Add 5-6 tablespoons of Chipotle sauce, salt, and black pepper to the beans and smash until refried.
Let the refried beans cool to room temperature.
Make small balls of masa dough, flatten them, and add the refried beans in the center.
Fold the masa over to create a half-moon shape and seal the edges.
Heat a skillet and cook the filled itacates for 2 minutes on each side until golden brown.
Prepare toppings with lettuce, sour cream, and queso fresco.
