Rinse 2 cups of red silk beans and soak them overnight or for a few hours.

Add enough water to cover the beans by about an inch.

Turn on the heat to high and add the chopped onions, garlic, and bell pepper to the pot with the beans.

Once the mixture boils, reduce the heat to low, cover, and cook for about 45 minutes.

After 45 minutes, add salt to taste, making sure to taste the broth.

Continue cooking for another 45 minutes or until the beans are soft.

If making refried beans, add oil to a pan and sauté the remaining 1/4 onion and 1/4 bell pepper until charred, along with the Serrano chili.

Blend the cooked beans with the sautéed mixture until smooth, adjusting thickness as desired.

For the breakfast, slice a ripe plantain and fry in hot oil until golden brown.

For tofu eggs, chop a whole Roma tomato and 1/4 onion, then sauté the onion in a pan until translucent, adding water to steam.
