Place a small saucepan on the stove top and add in 2 tablespoons of vegetable oil.

Once the oil has heated up, add in 1/2 cup of sliced onion and 1 chopped jalapeño pepper. Sauté these on medium heat for 3 minutes or until the onion is fragrant.

Add in 3 romaine tomatoes and the rest of your seasonings: 1/2 teaspoon of Mexican oregano, 1/4 teaspoon of cumin, 1/4 teaspoon of salt, and 2 bay leaves. Stir together and mix well.

Place a lid over the saucepan and cook the tomatoes for 3 minutes until they begin to break down.

Add in 1/4 cup of tomato sauce, stir to combine, cover, and cook for another 5 minutes until everything is cooked well. Remove from heat and transfer to a dish, covering to keep warm.

In the same saucepan, pour in 1 can of black beans. Once the beans start to simmer, use a spoon or potato masher to break them down into a smooth paste. Cook on medium heat for 7 minutes until thickened, then cover to keep warm.

Place a non-stick pan on the stove top and add in 1/3 cup of vegetable oil. Once heated, bring in corn tortillas, cooking one tortilla at a time for about 2 minutes on one side until golden, then flip and cook for another 2 minutes. Drain on a paper towel and cover to keep warm.

In the same pan, reduce the oil to about 3 tablespoons and crack in 2-3 eggs, depending on the size of your pan. Season with a little salt and cook for about 1-2 minutes until the edges are lightly brown. Turn off the heat and keep covered until desired texture is achieved.

Transfer warm tortillas to a serving dish, evenly spread mashed beans on each tortilla, place the sunny side eggs on top, and add salsa sauce as desired. Sprinkle with cotija cheese and add sliced avocado. Garnish with fresh cilantro leaves.
