Crispy Veggie Fritters

1 cup chickpea flour
1/2 cup grated zucchini
1/2 cup grated carrot
1/4 cup finely chopped onion
1/4 cup chopped fresh parsley
1/2 tsp cumin powder
1/2 tsp coriander powder
1/2 tsp baking powder
1/2 tsp salt
1/4 tsp black pepper
1/4 cup water
Oil for frying

In a mixing bowl, combine chickpea flour, grated zucchini, grated carrot, chopped onion, and chopped parsley.

Add cumin powder, coriander powder, baking powder, salt, and black pepper to the mixture.

Gradually add water to the mixture, stirring until a thick batter forms.

Heat oil in a deep frying pan over medium heat.

Once the oil is hot, drop spoonfuls of the batter into the oil, being careful not to overcrowd the pan.

Fry the fritters for about 3-4 minutes on each side or until they are golden brown and crispy.

Remove the fritters from the oil and place them on paper towels to drain excess oil.

Serve hot with your choice of dipping sauce or chutney.
