Begin by making the green sauce: add 15 tomatillos, 2 jalapeños, 5 chile serranos, a piece of onion, garlic cloves, half of cilantro, chicken bouillon, oregano, black pepper, and ground cumin to a blender with 4 cups of bean broth or water; blend until smooth.

Set a pan over medium-high heat and add bacon; cook until crispy, about 7-8 minutes, then remove and set on paper towels.

In the bacon grease, add chopped onion and yellow peppers; lightly fry for about 3 minutes, then remove from the pan and discard the grease carefully.

Add flank steak, cut into thin strips, to the pan; season with salt and black pepper and brown the meat.

Once browned, add the previously made green sauce to the pan and mix; bring to a simmer.

Taste the sauce for salt and adjust if needed; add 3 cups of pinto beans and mix in, allowing to cook for 5 minutes.

After 5 minutes, add the sautéed onions and yellow peppers back to the pan; continue cooking for another 10 minutes.
