Remove the outer leaves of the cabbage, especially if they look rough.
Cut the cabbage in half, leaving the core in.
Drizzle olive oil, salt, and pepper on the cabbage halves.
Preheat the grill pan and place the cabbage halves on it to get grill marks and flavor.
Grill the cabbage until it has a nice char, about a few minutes.
In a braising pan, coat the sliced cabbage with olive oil, salt, and pepper.
Add 1 cup of apple cider vinegar to the braising pan.
Pour in 2 cups of apple cider and 2 12-ounce bottles of cider beer.
Cover the braising pan with foil and place it in the oven at 275°F.
Braise the cabbage in the oven for 3 hours until tender but still with a bit of bite.
Remove the cabbage from the oven and cut it into pieces.
Taste and adjust seasoning with additional salt and pepper as needed.
