Heat vegetable oil to about 360 degrees.
Fry the tortilla pieces until golden brown and crispy.
Drain excess oil and salt the tortilla chips.
Cook chorizo in a sauté pan until browned.
Add cooked pinto beans, chili, and cumin to the chorizo, smashing some beans with a spoon.
If the mixture is too thick, add a little water to thin it out.
Add garlic to the chorizo and bean mixture.
In an oven-safe pan, layer tortilla chips, jalapeno peppers, onions, and the chorizo mixture.
Sprinkle jack cheese and cheddar cheese on top of the layers.
Repeat the layering process.
Bake in the oven at 350 degrees until the cheese is melted.
Mix sour cream with lime juice to create a lime cream.
Drizzle lime cream over the nachos and finish with cilantro.
