Green Chilaquiles Verdes with Eggs

Cut Mision tortillas into six parts.
Fry the tortilla pieces in oil until they reach a goldish color, cooking them evenly.
Remove the fried tortilla chips from the oil and drain on a plate with paper towel.
Blend cooked jalapenos and green tomatoes with one garlic clove and a small piece of onion.
Burn the small piece of onion in a pan to add flavor, then remove it from the fire.
Slice more onions and caramelize them in the pan.
Add the blended sauce to the caramelized onions, along with a little salt and chicken powder consomme (optional).
Stir the mixture and add a little more water, then let it cook for 10 minutes.
Add the fried tortilla chips to the sauce, cooking for 2 minutes for a crunchy texture or longer for a softer texture.
Serve the chilaquiles topped with sunny side up eggs, feta cheese, sour cream, raw onions, and avocado.
