Chili Crisp Fried Eggs

6 large Scottish free-range eggs
2 tablespoons olive oil or sunflower oil
2 teaspoons chili crisp oil
salt to taste

Heat a non-stick pan on low to medium heat.

Add 2 tablespoons of olive oil or sunflower oil to the pan.

Add 2 teaspoons of chili crisp oil and mix it around for a couple of minutes without turning on the heat.

Create a space in the middle of the pan and crack in 2 eggs.

Baste the uncooked egg whites with the hot chili oil from the pan.

Cover the pan with a plate to steam the eggs and cook the whites while keeping the yolks runny.

Check the eggs; the whites should have a popcorn texture and be fully cooked while the yolks remain runny.

Serve the eggs on a plate and add salt to taste.
