Curried Roasted Carrot Hummus

1 lb carrots, peeled and chopped
2 tbsp olive oil
1 tsp curry powder
1/2 tsp salt
1/4 tsp black pepper
1 can (15 oz) chickpeas, drained and rinsed
1/4 cup tahini
2 tbsp lemon juice
2 cloves garlic, minced
1/4 cup water (more if needed)
1/2 tsp cumin

Preheat the oven to 400°F (200°C).

In a bowl, toss the chopped carrots with olive oil, curry powder, salt, and black pepper until well coated.

Spread the carrots on a baking sheet in a single layer and roast for 25-30 minutes, or until tender and slightly caramelized.

Remove the roasted carrots from the oven and let them cool slightly.

In a food processor, combine the roasted carrots, chickpeas, tahini, lemon juice, garlic, cumin, and water.
