Crusty Bread Rolls

Cultural Context

Crusty bread rolls, known as Brötchen in Germany, are a staple of German breakfasts, often enjoyed with butter, jam, or cold cuts. These rolls are characterized by their crispy crust and soft interior, making them ideal for sandwiches or as a side with soups. Traditionally, they are baked fresh daily and are a beloved part of German bakery culture, with regional variations across the country.

1

Add 500 G strong bread flour to a large bowl.

2

Add 1 teaspoon salt to the flour and mix well.

3

Add 7 G dried yeast to the flour mixture and mix again.

4

Add 350 mL warm water all at once and mix until combined.

5

If the dough is too sticky, flour the work surface and add more flour while kneading.

6

Knead the dough for about 10 to 15 minutes until smooth and elastic.

7

Oil the bowl, place the dough back in, cover with cling film, and let rise in a warm place for about 1 to 1.5 hours until doubled in size.

8

Once risen, punch down the dough to knock back the air and knead for a couple of minutes.

9

Divide the dough into six equal pieces.

10

Shape each piece into a roll (round or slightly longer) as desired.

11

Place the shaped rolls on a pre-lined baking tray with baking paper and cover with cling film for about 30 minutes to rise again.

12

Preheat the oven to gas mark 7 (220°C) or 200°C fan-assisted.

13

Score the top of each roll twice before baking.

14

Add a tray of water to the bottom of the oven to create steam for a crust.

15

Bake the rolls for 10 minutes.

16

Check if the rolls are done by tapping the bottom; it should sound hollow.
