Slice the potatoes into quarter to half inch thick slices.
Place the sliced potatoes in a pot with a couple of inches of water and bring to a boil until just tender.
Drain the potatoes and let them sit in a colander.
In a cold dutch oven, add bacon and cook over low heat until crispy.
Transfer the crispy bacon to a paper towel-lined tray and set aside, leaving 1-2 tablespoons of bacon grease in the pot.
Add sliced onions to the bacon grease and caramelize over low heat, stirring frequently.
Once the onions are browned, add apple cider vinegar, water, and sugar, whisking to combine until the sugar dissolves.
Stir in stone ground mustard and deglaze the bottom of the pot.
Prepare a cornstarch slurry with cold water and stir it into the pot to thicken the sauce.
Once the sauce is thick and glossy, add the potatoes a handful at a time, tossing to coat evenly.
Add the bacon back into the potato mixture and serve warm.
