Marinated Slow Roasted Onions

1/4 cup olive oil
1/4 cup balsamic vinegar
2 tbsp honey
2 tsp salt
1 tsp black pepper
2 tsp fresh thyme leaves
1 tsp garlic powder

Preheat your oven to 300°F (150°C).

Peel the onions and cut them in half from top to bottom.

In a large bowl, whisk together the olive oil, balsamic vinegar, honey, salt, black pepper, thyme, and garlic powder.

Add the halved onions to the bowl and toss them in the marinade until well coated.

Place the marinated onions cut side down on a baking sheet lined with parchment paper.

Cover the baking sheet with aluminum foil to keep the moisture in.

Roast the onions in the preheated oven for about 2 hours, or until they are tender and caramelized.

Remove the foil and roast for an additional 30 minutes to allow the tops to brown slightly.

Once done, remove from the oven and let them cool for a few minutes before serving.
