Instructions

  1. 1Mix rice flour, water, and salt in a bowl until smooth.
  2. 2In a separate bowl, combine palm jaggery and grated coconut.
  3. 3Heat a steamer over medium heat until boiling.
  4. 4Grease banana leaves with oil to prevent sticking.
  5. 5Pour a small amount of the rice flour mixture onto the banana leaf, spreading it into a thin layer.
  6. 6Add a spoonful of the palm jaggery and coconut mixture in the center.
  7. 7Fold the banana leaf over to encase the filling, forming a parcel.
  8. 8Place the parcels in the steamer and steam for 15-20 minutes until cooked through.
  9. 9Remove from the steamer and let cool slightly before serving.
  10. 10Optionally, fry the steamed pithas in oil until golden brown for added texture.
