Fermented Carrot Sticks

Fermented vegetables have a long history in many cultures, serving as a method of preservation and enhancing flavors. Fermented carrot sticks are a popular choice for their crunch and tang, often enjoyed as a healthy snack or side dish. Today, they are embraced in various cuisines worldwide, celebrated for their probiotic benefits and vibrant taste.
Quantities are estimated based on standard recipes for your convenience. The actual ingredients used in this video are accurate.
Peel and cut carrots to similar size.
Stuff carrots tightly into a quart jar.
Add 2 teaspoons of pickling spice to the jar.
In a separate container, mix 2 cups (16 ounces) of water with 1 tablespoon of sea salt and stir until dissolved.
Pour the brine over the carrots in the jar.
Place a normal canning lid and band on the jar tightly.
Flip the jar over at least once a day to release gases and disturb the surface.
After 24 hours, check for bubbles and foam on the surface, indicating fermentation has started.
If desired, add sliced ginger or other flavorings like jalapenos, onions, or garlic to a second jar with remaining carrots.
After 48 hours, remove the lid to release CO2 and flip the jar again.
Check for cloudiness in the brine, which indicates active fermentation.
After 3 days, taste the carrot sticks to check for desired texture and flavor.
Once fermented to liking, move the carrot sticks to the refrigerator for longer storage.
