1

Clean the cow feet thoroughly with a knife and salt until they are very clean.

2

Boil water in a large pot and add the cleaned cow feet.

3

Add the tripe, cut into large pieces, to the pot.

4

Add bay leaves, thyme, and basil to the pot.

5

Add a generous amount of oregano for flavor.

6

Add a small amount of black pepper, adjusting to taste.

7

Cover the pot and let it simmer for about 2 hours, checking occasionally.

8

After about 1.5 hours, check the tripe for tenderness and add more salt if needed.

9

After 3 hours, check the cow feet for tenderness, as they may take longer depending on the animal.

10

Remove the cow feet from the pot and chop into smaller pieces, discarding any bones if possible.

11

Add the chopped cow feet back into the pot along with the vegetables: first add corn and yucca, cooking for about 10 minutes.

12

Then add zucchini and green plantains, cooking for an additional 5 minutes.

13

Peel and wash the green plantains with salt before adding them to the soup.

14

Finally, add the chopped carrots and any remaining vegetables, stirring well.
