Smashed Chickpea Salad

2 15oz cans chickpeas (drained and rinsed)
2 ripe avocados
1 red onion (finely chopped)
1 large celery stalk (cleaned and finely chopped)
1/4 cup fresh dill (chopped)
2 tablespoons fresh parsley (chopped)
2 tablespoons fresh mint (chopped)
2 tablespoons fresh basil (chopped)
2 tablespoons fresh green onions (chopped)
2 tablespoons capers
2 teaspoons red wine vinegar
1 green bell pepper (chopped)
1 tablespoon lemon juice
2 tablespoons olive oil
Salt and freshly ground black pepper (to taste)

Slice the avocados in half, remove and discard the seed, and scoop the flesh into a large bowl.

Add the chickpeas to the bowl, and use a fork to mash the two together.

After that, chop the veggies and the fresh herbs and add them to the bowl.

Stir in the remaining ingredients and season with salt and pepper to taste.

Serve as a salad or sandwich.
