Caramelized Plantain

Caramelized plantains are a popular dish in many Caribbean and Latin American countries, often enjoyed as a sweet snack or side dish.

Peel the ripe plantains and slice them diagonally into 1-inch thick pieces.
In a large skillet, heat the coconut oil over medium heat until melted.
Add the sliced plantains to the skillet and cook for about 2-3 minutes until they start to turn golden brown.
Sprinkle the brown sugar, cinnamon, and salt over the plantains.
Gently toss the plantains to coat them evenly with the sugar mixture.
Continue to cook for another 2-3 minutes, turning occasionally, until the plantains are caramelized and golden brown.
Remove the skillet from heat and let the plantains cool slightly before serving.
Serve warm as a side dish or dessert.
