Homemade Mexican Flour Tortillas

Flour tortillas are a staple in Mexican cuisine, particularly in the northern regions where wheat is more prevalent than corn. They are often used for burritos, quesadillas, and tacos, and are enjoyed by many families across Mexico and beyond. Making tortillas from scratch is a cherished tradition that enhances their flavor and texture, making them a beloved accompaniment to various dishes.

Grab a large mixing bowl and add 2 cups of plain flour, salt, and baking powder. Mix briefly to combine.
Add melted lard and milk to the dry ingredients.
Combine the wet and dry ingredients until a dough forms; it doesn't need to be perfectly smooth.
Knead the dough on a floured surface until smooth and elastic.
Shape the dough into a ball and place it into a clean mixing bowl. Cover and let it rest for 30 minutes.
After resting, take the dough from the bowl and weigh it. Divide the total weight by 10 to determine the weight for each tortilla (about 51 grams).
Roll each portion into a ball and place on a plate. Cover loosely with a cloth and let rest for 10 minutes.
Flour your work surface and roll each ball into a circle about 8 or 9 inches in diameter.
Preheat a frying pan or cast-iron skillet over high heat.
Place a tortilla into the skillet and cook until bubbles form on the surface. Flip it over and cook until lightly browned.
