1

Peel back the outer layer of the corn husk without removing it completely to expose the kernels.

2

Remove the silk from the corn by brushing it with your hand or using a brush.

3

Brush the corn with olive oil or coconut oil to coat it well.

4

Sprinkle the corn with homemade seasoning rub.

5

Fold the husk back over the corn to create a 'corn cocoon' to keep moisture in.

6

Twist the top of the husk to secure it closed.

7

Preheat the Traeger grill to 450°F, which takes about 10 to 15 minutes.

8

Place the corn on the grill and smoke for 5 minutes before increasing the temperature.

9

Grill the corn for 25 to 30 minutes.

10

Prepare the crema sauce by mixing together 1/4 cup of mayonnaise, 1/4 cup of sour cream or Greek yogurt, 1/4 teaspoon of chili powder, 1/4 teaspoon of cumin, 1-2 cloves of minced garlic, 2 teaspoons of lime juice, and 1/3 cup of cojita cheese.

11

Mix in chopped cilantro into the crema sauce or reserve it for garnish.

12

Once the corn is done, fold back the husk to create a handle for serving.

13

Optionally, add butter and salt to the corn, or drizzle with sriracha or wing sauce, or lather with the crema sauce.
