Einkorn Sourdough Bread

Einkorn sourdough bread is made from einkorn wheat, one of the oldest cultivated grains. It has a rich history, particularly in Europe, where it was a staple before modern wheat varieties became prevalent. This bread is often appreciated for its unique flavor and nutritional profile, making it a popular choice among artisanal bakers and health-conscious consumers.

Whole wheat flour is more nutritious, while all-purpose flour is budget-friendly.
Feed your sourdough starter about 4 hours before making the bread.
Add 3 1/2 cups of all-purpose einkorn flour to a bowl.
Add 1 1/2 cups of whole wheat einkorn flour to the bowl.
Add 1 1/2 teaspoons of salt and combine with hands.
Add 1 1/4 cups of fresh filtered water to the mixture.
Add 1 cup of bubbly sourdough starter to the bowl.
Combine the mixture and allow it to rest for 15 minutes.
Perform stretch and folds on the dough, flattening it out and folding it in on itself from all sides.
Cover the dough with plastic wrap or beeswax wrap and let it sit for 20 minutes.
Repeat the folding process every 20 minutes for a total of three folds.
Cover the dough and let it bulk ferment in a warm spot until doubled in size, which may take 3 to 12 hours.
Shape the dough and place it in a flour-coated tea towel-lined baking tin.
Put the shaped dough in a plastic bag and refrigerate overnight.
