Blueberry Chia Jam

3 cups fresh blueberries
1/4 lemon (zested and juiced)
maple syrup sweetened with monk fruit

Take a small saucepan and add 3 cups of fresh blueberries.

Add the zest and juice of 1/4 of a lemon to the saucepan.

Let the blueberries and lemon mixture bubble and soften until the color is dark and rich.

Add maple syrup sweetened with monk fruit to the mixture for sweetness.

Let the mixture bubble and reduce to about half its size.

Remove from heat and let it cool slightly before adding chia seeds.

Cook the chia seeds for just a little bit to soften them up.

Pour the jam into a container, preferably a mason jar, and let it cool completely.
