1 cup water
½ cup brown sugar
1 tbsp sea salt
2 black peppercorns
½ garlic clove
A pinch of dried chili flakes

Place vinegar, water, sugar, salt, chili, and garlic into a small saucepan.

Bring to a simmer, ensuring the sugar and salt has dissolved completely.

Remove saucepan from the heat and let cool to room temperature before chilling for 5 minutes in the fridge.

Prepare the firm avocados by peeling and pitting them, then cut into large slices.

Place the avocado slices into a sterilised 18-ounce or larger jar.

Top with cooled pickling liquid, making sure the avocado is completely covered.
