Cook 500 grams of pork fillet in 3 liters of water with 2 strips of orange peel, 5 peppercorns, 2 bay leaves, 1 teaspoon mustard seeds, 1 allspice berry, 1 dried chipotle, 1 dried chili, 2 tablespoons salt, 3 garlic cloves, and 1 onion for 1.5 to 2 hours at medium-low heat.
Boil 700 grams of tomatoes for about 7 minutes, then shock them in cold water to peel.
Blend the peeled tomatoes with the cooked chilies, onion, garlic cloves, 1/2 cup of the meat's cooking broth, 1/4 cup mayonnaise, 1/4 cup crème fraiche, a dash of cinnamon, and a dash of oregano until smooth.
Pour the blended sauce into a pan and bring to a boil, adding salt to taste.
Slice the bolillo rolls in half and spread refried beans on both halves.
Layer thin slices of the cooked pork on the refried beans.
Drizzle the warm sauce generously over the meat and beans.
Top with sliced avocado and a drizzle of crème fraiche.
